The dining experience begins with a choice between Slow Poached Langoustine Tails accompanied by labneh gnocchi and sheep butter beurre blanc, or Cured Hamachi Belly dressed with a mustard-yuzu creamy vinaigrette and golden Ossetra caviar, paired with a Moulin-a-Vent from Joseph Drouhin in Burgundy, France.
